It’s interesting when you consider the man. Edi Kante casts a towering presence. He isn’t quick to speak; but when he does, he imparts more knowledge in a few moments than most people do through an entire conversation. Kante is also an artist, whose work is plastered on the walls of the winery’s tasting room and is also used for the labels of his selections. While considered a pioneer of the Carso, and at one time the “Orange” wine movement, today, his portfolio comes across as quite unique from many of his neighbors, focused on immaculate purity, freshness and varietal character. The three-story gravity-flow cellar is dug deeply into the sheer limestone hills of the region, and as you descend down to each new level, the temperatures sink lower and lower. While Kante prefers to age his wines for a year, and sometimes longer in oak, refinement is completed all in neutral barrels of various sizes. The wines from the Selezione lineup will remain there until they are “ready”. Once bottled, the wines are moved to the lowest and coldest depths of the cellar, where they remain for six to seven years prior to release. Edi Kante, took over his family’s farm in the late 1980s, and is widely credited with spearheading Carso’s quality revolution—carving a three-level, 18-meter-deep cellar into the bedrock and championing native varieties like Vitovska and Malvasia. His ‘Selezione’ program highlights the best vineyard selections from exceptional vintages, and they're held back 8–10 years before release. Stainless steel fermentation followed by 12 months of aging in large, old\/neutral oak barrels (up to 18 years old—no new wood) and then a further 6 months in stainless steel on the lees. The 2016 component was aged separately for 3 years before being blended with the 2015, held for a week, then bottled unfiltered and aged for an additional 7 years in bottle prior to release! Here, heady aromatics of pomegranate and hibiscus meet a soft rush of tannins and vibrant saline finish. Though young Pinot Neros can exhibit austerity, Kante has cellar-aged this bottle before release. It is superb beside smokey meats and sharp cheeses or comforting Madeira-glazed mushrooms with roasted chicken.
