The 2007 Chateau d'Yquem is a legendary, world-class Sauternes dessert wine widely considered a modern masterpiece and perfect archetype of the region's "botrytis miracle". It is highly acclaimed by major critics, earning an aggregated 98-point rating from publications like Robert Parker's Wine Advocate and The Wine Independent.

Essential Wine Overview
  • Type & Style: Sweet white dessert wine; lush, opulent, and perfectly balanced.
  • Grape Composition: A classic blend of 80% Sémillon and 20% Sauvignon Blanc.
  • Aging Window: Exceptionally long-lived; drinking beautifully now, with the structure to cellar comfortably through 2050–2060.
Flavor Profile and Character
The 2007 vintage is defined by its striking tension between rich sweetness and sharp, refreshing acidity.
  • The Nose: Intense and highly aromatic, opening with vibrant layers of apricot preserves, dried mango, pineapple paste, acacia honey, and exotic saffron, rounded out by subtle woodsmoke and vanilla from its new French oak aging.
  • The Palate: Deeply concentrated, heavy-bodied, and satin-textured. It coats the mouth with flavors of candied ginger, orange zest, and quince, but avoids tasting cloying due to a powerful, racy mineral backbone.
  • The Finish: Sensationally long, spicy, and focused, ending with a sophisticated savory note.
The 2007 Growing Season
The vintage triumphed over a very chaotic, cool, and rainy summer. Just as a mediocre harvest was feared, a warm, dry September and perfect morning mists triggered a late, flawless wave of Botrytis cinerea (noble rot) across the vineyard. The grapes achieved maximum flavor concentration in October, yielding a late-harvest wine that winemakers compare to the historic 1967 and 1997 vintages.

Serving and Buying Tips
  • Food Pairings: Outstanding alongside classic pairings like foie gras, rich blue cheeses (such as Roquefort), or lightly sweetened fruit tarts.
